Sainte-Maure is a soft goat log recovered in ash, its taste is dense with lemony notes, slightly nutty and will become more herbal and stronger as it matures. With a straw in the middle making it distinctive from other goat cheeses as handmade by an artisan producer. Lovely to enjoy with a fruity white wine from the same region.
