Mimolette - Pasteurised Cow Milk, Normandy (Isigny) France
The mimolette or boule de Lille is a fabulous French cheese which is appreciated by many. Its methods are the same as Edam and are produced into a ball shape cheese in the North of France.
Its orange colour comes from annetto added, its paste is semi soft and become harder as it matures. Its taste is fruity, with well balanced of sweetness and saltiness and nutty complexity as it becomes mature. The mimolette is matured between 6 and 10 months old.
