Vacherin Mont d'Or AOC
With a limited production from September to April, when the cows are down the mountains, this French cheese is best served hot, after 20 minutes cooking in the oven. Delicious over potatoes or just to spread over bread, it tastes has hints of farmyards, meadow flowers and white wine with a woody tang. It can also be consumed cold.
